Bourbon Peach Smashburger

Easy. Simple. Satisfying. I always have a box of frozen smash burgers in my freezer for those times that I just don't want to overthink dinner. And when it comes to my burgers, I'm a crunchy girl. I like crunchy lettuce, fresh onion, homemade pickles... I'm every topping hater's worst nightmare.
That being said, you will find that this recipe includes none of my favourite toppings, and yet the burger was good enough for me to think you'd enjoy it too. Every single item used was an item I already had in the pantry. Cheers to no grocery store trips.
Sharp white cheddar cuts the flavour of ripe peaches that shine in this bourbon bbq sauce, topped with crispy, frizzled onions, on a pretzel bun. Some of my new favourite things...:')

Ingredients:
bacon
thinly sliced sharp white cheddar
smash burger (fresh works too but I used frozen here)
frizzled onions
Kinder's Bourbon peach bbq sauce
pretzel bun
Method:
I used frozen, pre-cooked bacon. I warmed 2 pieces for each burger I made, leaving them slightly under from being crunchy. Leave in the microwave to keep warm while you work on other things.
While heating my cast iron over high heat, I sliced my pretzel buns and buttered each side. I threw them in the cast iron just to get some colour and warm them up because I had them in the freezer. Make sure to flip them and get the "outside" of the bun too, helps transfer more heat!
Remove the buns and set to the side, immediately replacing with the smash burgers.
If you're using frozen, throw them in and let them sit untouched for 3-4 minutes before flipping, allowing to cook 3-4 minutes more, depending on the thickness. If needed, use a weight to hold don your burger and achieve a good sear.
If you're using fresh, season your ground beef to your desire, roll into similar weighted balls, and throw into the pan. Place a piece of parchment overtop the ball, and using your biggest spatula, press down firmly on your ball to smash it into a burger. Allow to cook 3 minutes untouched before flipping, allowing to cook 1-2 minutes more.
Within the last minute of cooking whichever type of burger, top the burgers with the 2 pieces of bacon, then place 2 pieces of the sharp white cheddar on top. Cover your cast iron with a lid and allow the cheese to melt.
Place your burger on the bottom bun and immeditaley top the cheese with any type of frizzled onions you have. If the cheese is still in the melty phase, they should stick pretty well.
Apply as much Kinder's Bourbon peach bbq sauce to the other side of the bun as your heart desires, wrap in foil, and enjoy! It's one to add to the rotation for sure.
